An easy-to-make savory delight. And now that artichokes can be found already peeled, it takes but a short time to prepare this satisfying main course.
Watch this video to see how I do it
Or you can read it
It all starts with
400gr Artichokes, cut into 1/2'' cubes
1 large Onion, sliced
1 tsp Paprika
1 tsp Turmeric
Juice of 1 Lemon
And this is how it gets done
Cut the artichokes into 1/2'' cubes and coarsely chop the onion.
Pre-boil the artichokes for about an hour.
Fry the onion for 2 minutes.
Add the artichokes and peas, stir and fry for 4-5 minutes.
Make sure they all get a chance to meet the bottom of the pot.
Add turmeric, paprika, salt and pepper, and stir to get everything coated with them.
Add the lemon juice and stir for 1-2 minutes.
Add 2 cups of boiling water, and stir again.
Bring to a boil over high heat.
As soon as it boils, lower the heat to a simmer and partialy cover.
Cook for 40-60 minutes, and pay a visit to the pot every 15-20 minutes to stir things up.
The dish is ready when the artichokes are soft, and the level of liquid meets the exact amount of sauce you would like to have.
Best served with an under-layer of rice or tiny pasta.
