This one-pot-pasta vegan recipe is one of my new go-to dishes when I need a main course for dinner, but have little time or energy to cook. And when its all done I only have one pot in the sink to wash :-)

It all starts with
Pasta (250 gr for two portions)
3 Garlic cloves - sliced
1 medium Onion - sliced
1 cup Tomatopulp
Basil (I use two twigs, but you can add or use less, depending on how much you like basil)
2 cups boiling Water (Add 1 cup for every 2 extra portions of pasta you make)
And this is how it gets done
Slice the garlic cloves and onion and seperate the basil leaves from their twigs.
Heat the olive oil in a large pot and fry the onion (for long pasta use a large enough pot).
When the onion starts to get brown edges, add all the ingredients to the pot.
Add the boiling water and cover the pot until it gets back to a boil.
Stir every two minutes (you can re-cover the pot between sessions of stiring to make things quicker).
Keep stirring until almost all the liquid in the pot is absorbed in the pasta (or when the pasta sauce is just the right consistency you like).
