A distinguished member of the comfort-food group, mashed potatoes also retain the status in their vegan version. Arguably the easiest dish to make, and one of the best at making you feel stuffed after dinner :-)

It all starts with
5-6 medium Potatoes
1 cup unswittened Soy milk
1 medium Onion
And this is how it gets done
Peel the potatoes and cut them into 1/4'' slices.
Chop the onion.
Put potato slices into a pot with boiling water and cook for 15-20 minutes, or until they're soft enough to mash.
You can check if they're ready by sticking them with a fork or a knife.
Heat oil in a pan on medium to low heat. Fry the chopped onion until it starts to get brown at the edges.
Strain the boiled potatoes and put them in a mixing bowl.
Add salt and pepper, and start mashing.
After all the potato slices are mashed beyond recognition, add the unswittened soy milk and stir to mix it in.
Next add the fried onion with the oil it cooked in.
I let the onion in oil cool for 5-10 minutes before i add it to mix, but you can also add it at the end of its frying, straight from the pan.
