With just the right amount of crunchiness and a mild minty taste, the fennel is a favorite of my love. This vegan fennel salad recipe is just perfect with my home version of a well-known dressing.

It all starts with
3 medium Fennels
1 small bunch Parsley
1/2 cup Olive oil
2 tsp Mustard
1 tsp Sugar
4 Garlic cloves
Salt & Pepper
And this is how it gets done
Cut fennels in half and slice length-wise into 1/8' slices.
Chop the garlic cloves and parsley.
Prepare the dressing:
Put in a container you can cap and shake: Pepper, Salt, Sugar, Garlic, Mustard, Lemon juice and Olive oil
Now shake it all up vigorously!
Pour dressing over the sliced fennels.
Add the chopped parsley, and toss.
Enjoy the minty crunch.
