This basic red sauce has been forever my starting point for anything in liquid tomatoes, long before I started cooking vegan food.

It all starts with
400gr Tomato pulp
2 tbsp Tomato paste
1 large Onion
2-3 Garlic cloves
Hot Pepper (optional)
1 tsp Brown sugar
1/2 tsp Thyme or Oregano
And this is how it gets done
Chop the onion, garlic and hot pepper.
Fry the onion.
When it starts to get brown at the edges add salt, pepper, thyme (or oregano), garlic, hot pepper and tomato paste.
Stir and fry for 1 more minute.
Add the tomato pulp and the brown sugar and stir.
Bring to a boil, lower the heat and let simmer for 25 minutes.
Just before serving you can add fresh Basil or Parsley and Cylantro.
