Carbs are the most filling, comforting part of the meal. They are also one of the cheaper items on your shopping list, easily available, and have a long shelf life in your pantry. Each specific variety can be the basis for many MANY different recipes.

The US Department of Health recommends in its Dietary Guidelines – for vegans and non-vegans alike - that at least half of the grains you consume will be whole.
The downside, as far as us home cookers are concerned, is that preparation of whole grain based foods takes longer and is slightly more work intensive, and the fact that they taste differently than the refined grain foods we are more accustomed to eating.
Truth is we personally don't really like the texture or the taste of whole grains, so we eat them in foods in which they are less noticeable: We don't eat brown rice and whole-wheat pasta, but our bread is ALWAYS whole-wheat bread, and so are the tiny pasta and the couscous, in which the difference in taste is almost unnoticeable.
So, if you want to be like us, just go with what you feel you can live with: incorporate as much as you can of the whole grain food variety in your diet, but don’t give yourself too much of a hard time for the refined grain foods you consume just because it's delicious, familiar and readily available.
